The board flies away from me when I scoop the board. I'm jumping high enough, so how do I keep the board spinning UNDER my feet?

Don't scoop as hard it's a 3 shuv not a tre so when you scoop, scoop the tail flat don't have your toes hang off the tail
Your scoop needs to be hard but undercontrol, look The rotation and truc to adjust your landing on your board
The best thing I've seen is about the foot position, I found that when I had my foot in the middle of the tail it was so much harder to get the board round and keep underneath you, try putting your toes over the corner of the tail you won't need to scoop as hard and helps to keep the board underneath you!
Try to not have your foot on the tip of the bored try to keep it lower
Practice 180 pop shove-it, for the 360 is the same, juste give more force and dont exaggerate the movement.
